Apple Stuffing

Made with sourdough bread, green apples, applesauce, and white miso, it’s rich, aromatic, and full of depth. Preheat oven to 350°F (175°C). Spread bread cubes in a single layer on two baking sheets. Bake for 10–15 minutes, stirring halfway through, until evenly toasted.

Increase oven temperature to 375°F (190°C).

In a large saucepan over medium heat, warm the olive oil and add the onions, celery, garlic, and poultry seasoning. Cook, stirring often, until the vegetables have softened and are aromatic — about 8–10 minutes.

Turn off the heat and add the toasted bread. In a separate bowl, whisk together the vegetable stock, applesauce, and miso. Pour over the bread mixture and toss well.

Add the diced apples and parsley, mixing until evenly combined.

Transfer to a 9 × 13 inch (23 × 33 cm) baking dish and spread evenly.
