Potatoes don’t need an emotional support egg to shine—these vegan latkes are proof! They’re crunchy on the outside, tender on the inside, and they hold together like your last nerve during the holidays—no eggs required.

Step 1

Grate the potatoes and onions, squeeze the absolute crap out of them but save the liquid because the white gold sinks to the bottom after a few mins. Discard the water but keep the starch.

Step 2

Mix the dry and throw in everything else.

Step 3

'Knead' it together it should be mushy but just about retain it's shape. If it's falling apart, it's too wet, just add a touch of flour, but not too much and try again.

Step 4

Place them in low flame hot oil and let it cook low and slow until golden. These take about 10 mins to fry, so be careful and patient. If the oil's too hot, they'll be raw in the middle.
