This is not your typical fruit cake … it’s better! Who knew that combining these ingredients could produce such a burst of flavor? There is something sublime about the combination of orange cake and olive oil. The cake is moist and rich, while citrus gives it a wonderful fresh aroma!

Step 1

Heat oven to 350 F.

Take a round cake pan and spray with olive oil.

Step 3

Take a mixing bowl and add the zest and juice of 2 oranges, almond coconut milk , vanilla extract, agave, olive oil. Mix until combine.

In another bowl add spelt flour, almond flour, baking soda, baking powder and salt. Mix to combine.

Step 5

Pour the dry ingredients into the wet ingredients and whisk until smooth.

Step 6

Pour the batter into the baking dish and bake for about 40 minutes.
