Preheat oven to 350ยฐF (175ยฐC). Spread bread cubes in a single layer on two baking sheets. Bake for 10โ€“15 minutes, stirring halfway through, until evenly toasted.

In a large saucepan over medium heat, warm the olive oil and add the onions, celery, garlic, and poultry seasoning. Cook, stirring often, until the vegetables have softened and are aromatic โ€” about 8โ€“10 minutes.

Turn off the heat and add the toasted bread. In a separate bowl, whisk together the vegetable stock, applesauce, and miso. Pour over the bread mixture and toss well.
