Apricot Hamantaschen Galette
This giant hamantaschen, technically an apricot galette, is made just like the traditional version with sweet apricot filling but wrapped in a homemade vegan pastry crust.

Step 1
Slice butter into cubes and freeze briefly.
Step 2
In a food processor, combine flour, sugar, salt, and orange zest. Pulse twice.
Step 3
Add chilled butter and pulse until large crumbs form. Drizzle in ice water and pulse until dough comes together. Form into a disc, wrap, and refrigerate for at least 1 hour.
Step 4
Preheat the oven to 400°F.
Step 5
Let the dough sit for 15 minutes to soften slightly. Roll into a circle on parchment.
Step 6
Spoon apricot jam into the center. Fold edges inward to form a triangle.
Step 7
Whisk aquafaba, almond milk, and vanilla. Brush edges and sprinkle with sugar.

Bake for 40–45 minutes until golden brown.
