Passover Matzo Icebox Cake
This cake transforms simple matzo into a rich, layered dessert with cinnamon-sugar crunch and a luscious vegan cream filling. After chilling overnight, the layers soften into a cake-like texture thatโs both nostalgic and indulgent. Perfect for a modern, plant-based Seder table.

Step 1
Arrange the matzo on a baking sheet.
Step 2
Brush both sides of the matzo with the melted butter and sprinkle both sides generously with cinnamon sugar.
Step 3
Bake the matzo in a 300ยฐ oven for 15-20 minutes, or until golden brown and crisped.
Step 4
Allow matzo to cool.
Step 5
In a mixing bowl, combine the cream cheese and sugar, mixing well.
Step 6
Add the remaining ingredients and mix to fully combine.
Step 7
Line a small dish or pan with plastic wrap. Use enough plastic so that there is extra hanging over the sides the pan.
Step 8
Add a few tablespoons of the cream cheese mixture to the pan and spread to cover the bottom.
Step 9
Add a layer of matzo, braking up the matzo as needed.
Step 10
Continue to layer the cream cheese mixture and matzo until you run out.
Step 11
Cover the top of the cake with the extra plastic wrap and place in the refrigerator overnight.
Step 12
The next day, unwrap the cake and turn out onto a cutting board or serving plate.

Cut into slices and serve with fresh fruit or leftover charoset.
