Grilled shawarma mushroom skewers with a quick chickpea salad — a crowd-pleasing vegan dish for any summer gathering.

Directions


Step 1

Marinate the Mushrooms: In a large bowl, whisk together the olive oil, smoked paprika, cumin, turmeric, oregano, garlic powder, grated garlic, salt, lemon juice, and zest. Add the mushrooms and toss to coat thoroughly. Marinate for at least 1 hour, or overnight in the refrigerator for maximum flavor.

Step 2

Make the Chickpea Salad: In a medium bowl, combine the tomatoes, cucumbers, chickpeas, lemon juice, and parsley. Season with salt and pepper to taste.

Step 3

Grill the Skewers: Preheat a grill or grill pan. Thread the marinated mushrooms onto skewers. Grill over medium-high heat, turning occasionally, until lightly charred and cooked through.

Step 4

Serve: Serve the mushroom skewers warm with the chickpea salad and a side of garlic sauce.
